Connie's Chile Verde Soup

Connie's Chile Verde Soup (2nd place winner!)


  • 2 Chicken breasts, cut and cooked or 1 large can chicken
  • 4 Cups Chicken Broth
  • 1 Small can Mild Green Chili Enchilada Sauce
  • 1 can Black Beans, drained and rinsed
  • 1 can Corn, drained
  • 3-4 Green Onions, chopped
Combine and simmer 30 minutes.

Add 1/2 bunch Cilantro, chopped
If too spicy, add more chicken broth to taste.
Serve with Fritos, sour cream, and cheese.
